How to store your vanilla pods: the guide to preserving black gold

You've just indulged in some beautiful, plump, and fragrant Bourbon vanilla pods. But a question arises: how do you maintain that suppleness and enchanting aroma for as long as possible?

Vanilla is a delicate, living product that requires a little attention. If stored improperly, it can dry out in a few weeks or, worse, mold. Here are our professional secrets for storing your vanilla pods for 12 to 24 months without losing a drop of aroma.

🛡️ The 3 enemies of vanilla

To store vanilla properly, you first need to understand what harms it. Vanilla is sensitive to three factors:

    1. Air: It oxidizes the pod and eventually dries it out (it becomes brittle).

    2. Light: It alters the aromatic molecules and discolors the pod.

    3. Temperature fluctuations: Too much heat dries it out, too much cold solidifies it.

🏺 The ideal method: glass tube or jar

Glass is the most neutral and effective material.

    • The container: Use an airtight glass tube or a jar that is well-proportioned to the size of your pods. Avoid jars that are too large, where air would circulate too much.

    • The location: Store your jar in a dry cupboard, away from direct sunlight. A temperature between 15°C and 20°C is perfect.
